I have had a thing with cake box makeovers lately. Don’t get me wrong. I love homemade cake. But sometimes I don’t have a lot of time, ingredients, (insert more excuses here).

I made these margarita cupcakes for my friend’s birthday, and they are also PERFECT for the upcoming celebration of Cinco de Mayo! They are spiked with tequila and lime to make a fantastic and different margarita dessert.

Almost as good as a giant margarita, and amazing with one! Happy (almost) Cinco de Mayo!

  • Preheat oven to 350 degrees. Spray with cooking spray or line a cupcake tin with wrappers.

  • While the cupcakes are baking, whip butter until fluffy. Add the 1 tsp tequila, lime juice, and food coloring and beat to combine. Slowly add the powdered sugar until well combined and whipped.
  • When cupcakes are cool, brush the tops with extra tequila and sprinkle with colored sprinkles of choice. Frost with the lime frosting. Enjoy!
