I have had a thing with cake box makeovers lately. Don’t get me wrong. I love homemade cake. But sometimes I don’t have a lot of time, ingredients, (insert more excuses here).
I made these margarita cupcakes for my friend’s birthday, and they are also PERFECT for the upcoming celebration of Cinco de Mayo! They are spiked with tequila and lime to make a fantastic and different margarita dessert.
Almost as good as a giant margarita, and amazing with one! Happy (almost) Cinco de Mayo!

Margarita Cupcakes
Ingredients
Cake:
- 1 box Yellow Cake Mix
- 1/2 cup Canola Oil
- 3 eggs
- 3/4 cup Water
- 2 tbsp Lime Juice, Freshly Squeezed
- 1 tbsp Tequila
- 1 tsp lime zest
Frosting:
- 1 cup (2 sticks) Butter, room temperature
- 1 tsp Tequila
- 1 tbsp Lime Juice
- Food Coloring
- 2 cups Powdered Sugar
- Extra Tequila
- Sprinkles
Instructions
- Preheat oven to 350 degrees. Spray with cooking spray or line a cupcake tin with wrappers.
- Combine all cake ingredients and beat for two minutes, or until lightened in color. Fill cupcake tins about 2/3 full and bake for twenty minutes, or until tops are golden brown.
- While the cupcakes are baking, whip butter until fluffy. Add the 1 tsp tequila, lime juice, and food coloring and beat to combine. Slowly add the powdered sugar until well combined and whipped.
- When cupcakes are cool, brush the tops with extra tequila and sprinkle with colored sprinkles of choice. Frost with the lime frosting. Enjoy!
