I have had a thing with cake box makeovers lately. Don’t get me wrong. I love homemade cake. But sometimes I don’t have a lot of time, ingredients, (insert more excuses here).

I made these margarita cupcakes for my friend’s birthday, and they are also PERFECT for the upcoming celebration of Cinco de Mayo! They are spiked with tequila and lime to make a fantastic and different margarita dessert.

Almost as good as a giant margarita, and amazing with one! Happy (almost) Cinco de Mayo!

Margarita Cupcakes

Makes 24 Cupcakes


Ingredients
Cake:
1 box yellow cake mix
1/2 cup canola oil
3 eggs
3/4 cup water
2 tbsp lime juice, freshly squeezed
1 tbsp tequila
1 tsp lime zest

Frosting:
1 cup (2 sticks) butter, room temperature
1 tsp tequila
1 tbsp lime juice
Food coloring
2 cups powdered sugar
Extra tequila
Sprinkles

Directions
1. Preheat oven to 350 degrees. Spray with cooking spray or line a cupcake tin with wrappers.
2. Combine all cake ingredients and beat for two minutes, or until lightened in color. Fill cupcake tins about 2/3 full and bake for twenty minutes, or until tops are golden brown.
3. While the cupcakes are baking, whip butter until fluffy. Add the 1 tsp tequila, lime juice, and food coloring and beat to combine. Slowly add the powdered sugar until well combined and whipped.
4. When cupcakes are cool, brush the tops with extra tequila and sprinkle with colored sprinkles of choice. Frost with the lime frosting. Enjoy!
