Margarita Cupcakes

Margarita Cupcakes

I made these margarita cupcakes for my friend’s birthday, and they are also PERFECT for the upcoming celebration of Cinco de Mayo! They are spiked with tequila and lime to make a fantastic and different margarita dessert.

ingredients

Cake: 1 box Yellow Cake Mix 1/2 cup Canola Oil 3 eggs 3/4 cup Water 2 tbsp Lime Juice, Freshly Squeezed 1 tbsp Tequila 1 tsp lime zest

ingredients

Frosting: 1 cup (2 sticks) Butter, room temperature 1 tsp Tequila 1 tbsp Lime Juice Food Coloring 2 cups Powdered Sugar Extra Tequila Sprinkles

Preheat oven to 350 degrees. Spray with cooking spray or line a cupcake tin with wrappers.

Combine all cake ingredients and beat for two minutes, or until lightened in color.

Fill cupcake tins about 2/3 full and bake for twenty minutes, or until tops are golden brown.

While the cupcakes are baking, whip butter until fluffy. Add the 1 tsp tequila, lime juice, and food coloring and beat to combine. Slowly add the powdered sugar until well combined and whipped.

When cupcakes are cool, brush the tops with extra tequila and sprinkle with colored sprinkles of choice. Frost with the lime frosting.

Enjoy!
