Growing up, my favorite breakfast that my mom cooked was German pancakes. What’s better than a big, puffy pancake loaded with butter, lemon juice, and powdered sugar (or other toppings of your choice)? Nothing, I tell you!

Seriously, this is awesome. And easy enough that it’s the perfect weekend breakfast. There are only three ingredients, and I usually have all of them on hand.

Whisk together the eggs, flour, and milk until just combined and smooth. Uh yeah, that’s all ya need.

Melt a tablespoon of butter in a pie dish by placing it in the oven.

Poor batter right over melted butter.

Return to the oven for ten minutes. German pancakes are so beautiful and puffy when they’re just finished! They don’t always rise quite the way they’re supposed to, but they can be seriously pretty. My mom and I have yet to identify what conditions create the perfect pancake. Unfortunately they sink down pretty quickly after being taken out of the oven.

 

Great toppings include powdered sugar, lemon juice, jelly, syrup, and cinnamon (not all at once- gross). Get creative! These also make a quick and easy breakfast-for-dinner-dinner. One of Boyfriend’s favorites!

German Pancakes
Ingredients
1/2 cup flour
1/2 cup milk
2 eggs

Directions
Preheat oven to 425 degrees. Whisk together all ingredients until just combined. Put a tablespoon of butter in a pie dish and warm in the oven until the butter is melted. Pour the batter on top of the melted butter and return to oven for ten minutes.
