Beer Braised Stewed Beef

Ingredients
 

  • 1 tbsp olive oil
  • 1 onion, roughly chopped
  • 3 large carrots, peeled and chopped
  • 3 stalks celery, roughly chopped
  • 2 tsp minced garlic
  • 1/2 pound sausage of choice, chorizo recommended, casing removed
  • 1 can diced tomatoes
  • 1 lb stew meat
  • 12 oz dark lager, a regular lager will work if you can’t find a dark lager, a dark beer, like Guiness, would also be great
  • 2 cups beef stock
  • 1 bay leaf
  • 4 sprigs rosemary
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp red pepper flakes
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • Maize meal or grits
  • 1 tsp butter
  • 1/4 cup gouda, shredded or diced

Instructions
 

  • In a large saucepan, heat the olive oil. Add the onion, carrots, celery, garlic, and sausage. Cook until the sausage is browned. Stir in the tomatoes. Remove to dutch oven, oven safe cast iron cooking pot, or crock pot.
  • Season the stew meat with salt and pepper. Brown in the same saucepan used to cook the veggies and sausage. Remove to the other pot as well.
  • Deglaze the saucepan with the beer, scraping the edges. Add the stock, bay leaf, rosemary, chili powder, paprika, cumin, red pepper flakes, salt, and pepper. Bring to a simmer. Pour over meat and veggies.
  • If cooking in an oven safe pot, cook for 2 1/2 hours at 325 degrees F (170 degrees C). If using a crock pot, cook on low for 6-8 hours.
  • Prepare the maize meal or grits according to package directions. Stir in butter and cheese over low heat until melted.
  • Serve stew and juices over grits or pap.
