Peri Peri Chicken

Ingredients
 

  • Juice of two lemons
  • 1 tbsp white vinegar
  • 1/4 cup olive oil
  • 1/2 yellow onion, roughly chopped
  • 1 1/2 tsp minced garlic
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cayenne pepper
  • 1 tbsp chili powder
  • 2 tsp paprika
  • 1 tsp ground oregano
  • 1/2 tsp ground ginger
  • 4 chicken breasts

Instructions
 

  • Whisk together all ingredients except the chicken.
  • Reserve 1/4 cup of the liquid and set aside in the fridge. Add the rest of the marinade to a large Ziploc bag.
  • Add the chicken breasts to the bag and let marinate for at least three hours, preferably overnight if possible.
  • If you have a grill, grill the chicken over medium-high heat for 6-8 minutes on each side, basting with the reserved marinade as you flip the chicken.
  • If you don’t have a grill, bake in an oven preheated to 400 degrees (or 200 degrees Celsius) for about 20 minutes. Broil for for a few minutes to give color, if desired. Add reserved marinade upon serving.
  • Let the chicken rest for a few minutes before serving. Suggested side dish: sweet corn!
