Butter each side of the bread slices liberally. Heat a heavy bottomed skillet (like cast iron) over medium heat. Griddle the bread on each side until golden brown.

Mix together the ricotta, honey, and mint in a small bowl. 

Cut the orange into thin slices and slice off the rind.

Spread the ricotta mixture over the toasts and top with the orange slices.
