Smoked Carrots with Za'atar and Honey

A great inclusion in any barbecue, smoked carrots can either complement other dishes or take center stage! This recipe calls for a pellet grill, such as a Traeger or Green Mountain Grill. The carrots are seasoned with a blend of za'atar and honey, and then garnished with feta cheese and parsley prior to serving for tons of flavor.

  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped parsley

  • Preheat pellet smoker to 250 degrees F.
  • In a small bowl, mix together the honey, olive oil, lemon juice, za'atar, and salt. Toss the cleaned carrots with half the honey mixture and reserve the other half.
  • Place the carrots directly on the grates of the smoker. Close the lid and smoke for 1 hour. Cook for 1 hour 30 minutes for softer carrots.
  • When the carrots are done, remove them to a serving plate using tongs. Toss with the reserved honey mixture and top with the feta cheese and parsley. Serve.

Notes

I recommend using a blend or one of the following types of pellets: apple, alder, cherry, maple, or pecan.
