Smoked Carrots with Honey and Za’atar

A great inclusion in any barbecue, smoked carrots can either complement other dishes or take center stage!

– 1 lb carrots, cleaned and trimmed – 3 tbsp honey – 2 tbsp lemon juice – 1 tbsp olive oil – 1 tbsp za'atar – 1 tsp kosher salt For serving – 1/4 cup crumbled feta cheese – 2 tbsp chopped parsley Equipment – Pellet Smoker

Preheat pellet smoker to 250 degrees F.

In a small bowl, mix together the honey, olive oil, lemon juice, za'atar, and salt. Toss the cleaned carrots with half the honey mixture and reserve the other half.

Place the carrots directly on the grates of the smoker. Close the lid and smoke for 1 hour. Cook for 1 hour 30 minutes for softer carrots.

When the carrots are done, remove them to a serving plate using tongs. Toss with the reserved honey mixture and top with the feta cheese and parsley.
