Strawberry Cheesecake Oatmeal

  • 4 oz (1/2 a package) low fat cream cheese, room temperature
  • 2 tbsp honey
  • 1 tbsp milk
  • ¼ tsp cinnamon
  • 1½ cups water
  • Pinch of salt
  • ¾ cup oatmeal (not instant)
  • 3 large strawberries, hulled and cut into thin strips
  • Cinnamon, for serving (optional)
  • Honey, for serving (optional)
  1. Using a standing or handheld mixer, whip the cream cheese until lighter in texture and fluffy. Add the 2 tablespoons honey, ¼ teaspoon cinnamon, and milk. Beat until completely combined. Taste and add more honey if desired. Set aside.
  2. To make the oatmeal, bring the water to a boil in a small pot. Reduce heat to medium-high and add the salt. Add the oatmeal and cook stirring frequently for five minutes, or until thick.
  3. Pour the oatmeal into a bowl and top with strawberries. Drizzle desired amount of cream cheese mixture and sprinkle with cinnamon and extra honey if desired.
